Papayo | It's Coffee, but Why is it So Different?

Vietnam has Arabica coffee, named after the tea plant; Robusta coffee, named after the Vietnamese vối tree; and Excelsa coffee, named after the jackfruit tree... Colombia has papaya coffee because the fruit resembles a papaya. This is a rather new and peculiar Arabica variety grown in Huila, Colombia.


  1. 1. Introduction and Origin: Papayo is a rare and unique Arabica coffee variety named for its papaya-shaped fruit. Although there is some confusion about its origin, this coffee variety is primarily grown in Huila, Colombia, and is also found in other regions such as Tolima and Quindio.

  2. Interest and Potential: Interest in Papayo is growing, especially in coffee competitions, due to its complex and intriguing flavors. There is a hypothesis that Papayo and Ombligon may be the same variety due to their morphological similarities and their potential close genetic origin with Ethiopian coffee varieties.

  3. Cultivation and Processing: Papayo requires special cultivation and processing methods due to its large, uniquely shaped beans. Different processing methods like washed, natural, and honey can bring out desirable flavors.

  4. Flavor Profile: Papayo stands out with flavor notes of tropical fruits such as mango, pineapple, papaya, and stone fruits like plum, cherry, and peach. Additionally, it has flavors of spices and black tea.


Prospects in Competitions: Papayo has shown high potential in coffee competitions due to its complex flavor profile and adaptability to various processing methods. This could make it a popular choice among contestants in future World Barista Championships.

"COVID initiated an unexpected crisis, causing the world to stall and shut down. Thus, we must live slower and capture the best moments in the darkest of times.
